This is a favorite side dish in our house, and a more tasty and fibery alternative to french fries.
- 4 cups cauliflower florets
- 2 eggs
- 2 cups panko breadcrumbs
- Salt and pepper
- 1 scallion (thinly sliced)
- For the Sauce:
- 2 tablespoons sweet chili sauce
- 2 teaspoons Sriracha hot sauce
- 1/2 cup mayonnaise
- 1/2 cup non-fat plain Greek yogurt
Set oven to 425 F. Mix eggs, salt and pepper, a Tablespoon of water to make the eggs stick better.
Dip cauliflower in eggs and then in panko, toss to coat. Put onto a parchment-lined cookie sheet.
Bake for 15-20 minutes or until golden brown.
Make dipping sauce by whisking together all ingredients while cauliflower bakes.
